How I Test Family Favorites — One Pot, Hot Pan, Low vs High
One-pot starch rule: 12 oz penne + 3 cups broth + 1 cup milk = absorbed in 12 min covered low. 4 cups total is target — 4 cups milk only stuck and left skin; broth-only not creamy. Parmesan off heat handful at a time or it oils out. Photos of scalded vs creamy.
Hot pan = brown not steam: Empty half-sheet in 425°F oven 5 min while preheating. Halved potatoes flat-side down sizzled on contact vs cold pan steamed pale. Crowded single layer steamed too — I space 1 inch or use two pans. IR photo 415°F vs 75°F.
Low 8h vs high 4h: Same 3 lb chuck, same liquid, same cooker — low fork-shreds and glossy, high slices tight. Chuck needs low for pull; pork chops 1 inch to 145°F + 3 min rest to 150°F (1/2 inch over to 155°F and dry).
