  • 4 boneless pork chops 1 inch $6.99 (Aldi), patted dry - 1/2 inch tough at 20 min
  • 1 lb baby potatoes $2.49 halved 3/4 inch, flat side down
  • 1 lb carrots $1.29 peeled, cut 1/2 inch coins
  • Glaze: 2 tbsp honey $0.30*, 2 tbsp soy $0.15*, 2 cloves garlic minced, 1 tbsp oil
  • Half-sheet pan + parchment, tongs, probe

Aldi store brand that week - receipt photo in article. Walmart ±$0.40 same sizes.

Instructions

  1. Hot pan and potatoes 15 min Pan in oven 425FF. Toss potatoes/carrots with 1 tbsp oil + salt/pepper. Hot pan out, parchment, veg single layer 1 inch gap, roast 10 min.
  2. Pork 5 min plain Pat chops dry, salt/pepper, add to pan gaps, roast 5 min plain so surface sears not steams.
  3. Glaze last 5 min Mix honey/soy/garlic, brush chops and drizzle over veg, roast 5 min more to 145FF center-probe. Watch top - if dark, foil 2 min.
  4. Rest 5 min and store: cool within 2h, label Name | Date | 165F, fridge 4 days at 40F or freeze flat 1 inch headspace 3 months. Reheat center to 165F before serving.

Why this sheet pan - answer above the fold

Honey garlic burns - potatoes and carrots roast plain first 15 min, pork chops join, glaze brushed only last 5 min so it glosses without charring. 1 inch chops to 145FF rest to juicy, not dry. One pan, 30 min.

What I measured - amounts that matter

  • Chop thickness: 1 inch boneless $6.99 for 4 (~6 oz each). 1/2 inch hit 155FF in 12 min and was tough. 1 inch hit 145FF at 18-20 min then rest 3 min to 150FF - juicy slice, photo cut juice.
  • Hot pan + flat potatoes: Empty pan in oven while preheating 425FF 5 min. Halved potatoes flat side down sizzled - bottom browned. Cold pan steamed.
  • Glaze timing: 2 tbsp honey + 2 tbsp soy + garlic 2 cloves. Brushed at 15 min, 5 min to gloss. Brushed at 0 min burned by 15 min - photo black spots vs gloss.

Steps - specific to this pan

1. Hot pan and potatoes 15 min

What failed - one photo, one fix

Glazed at start - black bitter spots at 20 min, smoke. Now 15 min plain + 5 min glazed only, photo burnt vs glossy.

Probe Test - 1 Inch vs 1/2 Inch Pork Thickness

I used the same probe in center, not edge. Thin hit 155FF while potatoes still firm - had to pull pork and keep veg alone, extra dish. Thick finishes with potatoes at 20 min - one pan, one pull.

Frozen pork test: I froze one chop raw, thawed overnight vs cooked from frozen at 400FF 25 min - frozen direct was 10FF low in center at 20 min, uneven. Always thaw overnight on plate.

Cost - receipt, not estimate

Storage - what I actually do for this pan

  • Fridge: Chop leftovers within 2h, shallow 2-cup glass separate chops from veg (veg weeps), 40FF 4 days.
  • Freezer: Freeze chops + veg without extra glaze 3 months flat; add fresh glaze after reheat or it gets gummy. Label pork sheet pan | date | 375FF 8 min.
  • Reheat: Oven 375FF 8 min covered to 145FF then rest - keeps edge crisp. Microwave 2 min works but softens potatoes.

FAQs

Tested answers - not generic.

Pork dry--
1 inch thick to 145FF then rest 3 min carry to 150FF. I did 1/2 inch to 155FF - over 5 min and dry. Probe center, pull at 145FF.
Glaze burn--
Brush last 5 min only. I brushed at start: sugars burned at 425FF black spots by 15 min. Now potatoes/carrots 15 min plain, glaze 5 min.
Potatoes raw when pork done--
Halved 3/4 inch flat-down, added at 0 min. Whole potatoes still firm at 20 min. Halved creamy at 20 with pork 145FF.
Can I use chicken--
Yes thighs 425FF 22 min to 165FF, same glaze last 5 min. Chicken glaze held 7 min but pork glaze 5 min - sugars same.
One pan or two--
One half-sheet 18x13 holds all with 1 inch gap. Crowded went pale - spaced browned. Photo pale vs browned.
