  • 12 oz rotini $1.29 + 3 cups broth $1.19 (32 oz use 3 cups) + 1 can diced tomatoes $1.19 + basil $0.99 bunch off heat
  • 1/2 cup parmesan $0.60* + 1/4 cup starchy water trick + 1 tbsp butter $0.15* off heat only
  • 2 tbsp oil, 12-inch deep skillet + lid, probe to 165FF

Instructions

  1. Brown chicken 4 min: 1 tbsp oil, chicken 1/2 inch strips + onion 4 min.
  2. Simmer 12 min: Add dry rotini + 3 cups broth + 1 can diced tomatoes, bubble covered 12 min, stir at 7 min.
  3. Pull off heat, reserve 1/4 cup starchy water, stir in parmesan handful and butter until glossy.
  4. Add basil off heat 1 min toss, rest 5 min lid on, sauce clings.

One Pot, Not One Colander -- Answer Above the Fold

Dry rotini cooks in broth + tomatoes, starch thickens, basil and cheese go off heat. $11.90 for 4 ($2.98 each), 25 min, probe 165FF. No draining.

  3. Off heat finish: Save 1/4 cup starchy water before-- Actually with this method water absorbed -- if thick loose with 1/4 cup. Pull off burner, handful parmesan + 1 tbsp butter until glossy, basil torn 1 min toss.
  4. Rest 5 min: Lid 5 min, sauce clings not drowns. Probe thickest chicken 165FF center.

What Failed

Basil when--
Off heat last -- on heat turned black bitter. Off heat 1 min toss stayed green bright photo.
Cheese split--

Chicken dry--
Thighs sliced 1/2 inch 12 min to 165FF juicy. Breast to 165 at 10 min dry edge 180FF. Thighs forgiving.
Freeze--
Freeze base without cheese/basil 3 months flat 1 inch -- add fresh after 165FF reheat. Freeze with cheese grainy after 3 weeks.
