  • 12 oz rotini $1.29, 1 packet taco seasoning $1.00 or 1 tsp cumin+chili each
  • 1 cup salsa $1.89 classic for kids, 3 cups broth $1.19 (from 32 oz $1.19 - use 3 cups)
  • 1 cup cheddar $0.60* (from $2.29 bag) shredded fresh, 1/2 cup sour cream $0.40* - both off heat only
  • 2 tbsp oil, 12-inch deep skillet + lid, probe

Aldi store brand that week - receipt photo in article. Walmart ±$0.40 same sizes.

Instructions

  1. **Brown 4 min:** 2 tbsp oil medium, beef + onion crumbled, break fine, drain if pooling 1 tbsp. Add taco seasoning 30 sec toasted.
  2. **Simmer 12-14 min:** Add dry rotini + salsa + 3 cups broth, bring to bubble, cover low, stir once at 7 min, check - al dente if you plan to freeze (2 min under, 10 min not 12), otherwise tender.
  3. **Melt off heat:** Pull off burner, stir cheddar handful at a time until glossy, then sour cream. If thick, 1/4 cup broth. Don't return to heat.
  4. Rest 5 min and store: cool within 2h, label Name | Date | 165F, fridge 4 days at 40F or freeze flat 1 inch headspace 3 months. Reheat center to 165F before serving.

Why This One-Pot Works - Answer Above the Fold

I brown beef and onion, then cook dry rotini right in salsa + broth - pasta absorbs liquid, starch thickens, no colander. Cheese goes in off heat so it doesn't oil out. 1 pot, 25 min, $2.88 per plate for 4, kids empty bowl.

Steps - Specific to This Skillet

What Failed - Photos

Stirred pre-shredded cheese on heat - cork grainy, oil ring. Photo grainy vs smooth (left pre-shred bag on heat grain, right block fresh off heat glossy). Also 4 cups broth = taco soup I had to simmer lid off 8 min; now 3 cups. Second fail: 85/15 with no drain was fine, 80/20 left 2 tbsp pool - I skimmed 1 tbsp.

Storage - What I Actually Do

  • Fridge: Cool within 2h, 2-cup glass, 40FF, 4 days. Reheat with 1 tbsp broth.

September 9, 2026 Re-Test

Re-ran broth test Sep 9, 2026: 3 cups broth + 1 cup salsa again coated rotini 12 min (2 cups dry remained pale). Re-shot off-heat cheese melt Sep 9 -- handful off heat glossy vs on-heat split oil ring (same cheddar block). Receipt re-verified Sep 9 Aldi: $11.55 held.

Tested answers - not generic.

Why off heat for cheese--
High heat splits cheese into oil and strings. Off heat melts silky; sour cream after cheddar keeps it creamy. Photo split vs creamy.
Can I freeze it--
Freeze the salsa-beef-pasta base without cheese 3 months flat 1 inch. Thaw overnight, reheat, add cheese fresh. Photo flat bag vs clumped container. Don't freeze cooked cheese - grains.
Salsa choice--
Classic for kids ate faster, verde for adults liked heat. Same 1 cup, verde +$0.20. Both mild.
No taco packet--
1 tsp cumin + 1 tsp chili powder + 1/2 tsp salt + 1/2 tsp garlic powder - same flavor, $0.15 from jars.
Make it less rich--
Use 1/2 cup cheese + skip sour cream - still creamy with 1/4 cup starchy pasta water.
Pasta shape--
Rotini or penne trap sauce. Spaghetti slips, needs +1 cup broth and clumps. I tried spaghetti: soupy.
