Why this ziti - answer above the fold
Sausage browned first keeps fond, ziti boiled 2 min under al dente finishes in marinara so it absorbs, ricotta drained 5 min stays creamy, foil 15 min then bare 5 min browns without burning. $2.37 per of 6, one pot + one pan.
What I measured - amounts that matter
- Pasta: 12 oz ziti 9 min boil (2 under 11 min box), drain, toss immediately with sausage + marinara + 1 cup broth. 11 min boil + bake = mushy, 9 min = bite after bake.
- Ricotta drain: 1 cup ricotta in sieve 5 min - 2 tbsp water drained off. Undrained puddled under cheese.
- Bake: 375FF covered 15 min to bubbling, then uncovered 5 min to brown. 20 min uncovered burned top before center hot.
Steps - specific to this pan
1. Sausage 6 min + pasta 9 min
Oil medium, sausage crumbled 6 min brown, onion 3 min, garlic 30 sec, add marinara + broth. Boil water salt, ziti 9 min, drain, toss together.
2. Cheese mix
Mozzarella 1 cup into sauce, ricotta drained dollops, parmesan 1/4 cup. Reserve 1 cup mozzarella for top.
3. Assemble
9x13 pan, pasta mix, top mozzarella 1 cup. No stir after top - cheese layer stays.
4. Bake 15 + 5
Foil 15 min 375FF until bubbling at edge, remove foil 5 min until brown spots. Rest 10 min - cuts clean.
What failed - one photo, one fix
Boiled full 11 min then baked 20 min uncovered - mushy, burnt top. Photo mushy vs bite. Now 9 min + 15 covered +5 bare.

Freezer Variant: Three-Cheese (No Sausage) - Merged
This is the same method as above but meatless, tested Aug 15-Sep 22 as freezer-three-cheese-pasta-bake. Now consolidated here - one canonical ziti.
- Swap: Omit sausage, use 2 cups mozzarella $1.20 + 1 cup ricotta $1.89 + 1/4 cup parmesan $0.40 (reserve 1 cup mozz for top). Add 1/2 cup broth + 2 tbsp butter for gloss.
- Wrap test (8 weeks at 0FF): Same bake frozen unbaked 8 weeks: single foil only = iced dry top edge 1/2″ tough; plastic pressed directly on cheese surface + foil + lid = moist entire top, no ice. Photo side-by-side. Same result as How to Freeze Without Freezer Burn.
- Bake from frozen: 375FF covered 35 min to 165FF center (probe center not edge), uncover 5 min to brown. Thawed 25+5 also works but watery bottom sometimes. Cost $7.56 for 6 (~$1.26 each) Aldi Sep 22.

Storage - what I actually do for this ziti
- Fridge: Cool within 2h, 2-cup glass or covered pan, 40FF, 4 days. Reheat to 165FF.
- Freezer: Unbaked assembled plastic on surface + foil + lid, 3 months, label
ziti | date | 375FF 35 min covered to 165FF +5 bare. Or baked leftovers flat quart 3 months. Don't freeze glass - foil pan only (9% expansion pop). - Reheat: Microwave 2.5 min with 1 tbsp water or oven 350FF 15 min covered.
