One Hot Pan, Not One Cold Pan - Answer Above the Fold
Empty half-sheet in oven while it preheats to 425FF. Hot metal = potatoes sizzle on contact and brown, not steam pale. One 18x13 pan, 25 min, $2.88 per plate, probe to 165FF. Kids ate green beans because they stayed bright, not olive.

Steps - Specific to This Pan
- Hot pan 5 min: Empty half-sheet + parchment in oven at 425FF while you toss. 2 tbsp oil tossed potatoes + beans with garlic/paprika/salt. Potatoes flat side will face pan.
- Toss chicken: 1.5 lb thighs with 1 tbsp oil + same seasoning, keep center. Veg around border single layer 1 inch.
- Roast 22-25 min: Chicken center, potatoes flat side down. Don't open 15 min. Probe thickest chicken 165FF center not edge. Potatoes fork-tender, beans bright green.
- Finish off heat: Lemon squeeze over top not in pan water, brush 1 tbsp melted butter, rest 5 min on pan carryover to 168FF. Rest browns fond releases.
What Failed - Photos
Cold pan steamed potatoes pale, no crust - I thought "one pan = put everything cold" and veg boiled in own juice. Photo pale vs gold bottom. Now hot pan sizzle. Second fail: whole potatoes still chalky when chicken 165FF - I had to fish potatoes and wait 8 min. Now halved so same 22 min finish.
