Why this skillet - answer above the fold
Skin-down 5 min undisturbed to crisp, flip, cover low 12 min to 165FF so thighs stay juicy, garlic butter spooned off heat so it glosses without burning. One 12-inch skillet, 25 min, probe in thickest.
What I measured - amounts that matter
- Dry skin: Patted with paper until no moisture, salt right before sear not 20 min before (salt early draws water). 5 min skin-down medium undisturbed = even gold. Lifted early stuck and tore.
- Cover temp: Flip, add 1/2 cup broth around not over chicken, cover low (gentle bubble) 12 min to 165FF center-probe. Uncovered needed 20 min and dried. High covered to 175FF dry.
- Butter last: Butter + garlic added last 2 min off heat, spooned over 3 times. Added at sear: garlic black, butter brown-bitter.
Steps - specific to this skillet
1. Sear skin 5 min
Paper-dry thighs, salt/pepper/Italian, oil medium-hot, skin-down 5 min no move, brown fond is flavor.
2. Flip + cover 12 min
Flip, 1/2 cup broth around edge, cover low 12 min, gentle bubble not rolling boil. Probe thickest 165FF.
3. Herb butter off heat 2 min
Pull off heat, add butter + garlic + thyme, spoon hot pan juices over thighs 3x until butter glossy.
4. Rest 3 min + lemon
Rest 3 min on board, squeeze lemon if using over top not in pan (in pan it split butter).

IR pan at sear: 385FF hot vs 290FF cold start. Hot sear crisped in 5 min vs cold pan 8 min pale. I flip only once - second flip tore skin.
What failed - one photo, one fix
Garlic with thighs at start - black specks, bitter fond. Photo burnt vs golden garlic butter (same 4 cloves, same butter). Left: garlic added at 0 min = black. Right: added off heat = golden spoon. Now garlic + butter last 2 min off heat only. Second fail: covered high to 180FF - dry tight fibers, juice squeezed out. Now cover low to 165FF and rest 3 min carryover to 168FF.

Aldi Lewis Center Sep 19: thighs bone-in 1.5 lb $4.49 + butter 3 tbsp $0.30 (from $3.49) + garlic 4 cloves $0.10 + thyme $0.05 + lemon wedge $0.32 + broth 1/2 cup $0.30 = $5.56 for 4 (~$1.39 each) + russets 1.5 lb $2.49 = $8.05 for 4 with side. Storage - what I actually do for this skillet
- Fridge: Cool within 2h, shallow 2-cup glass with juices spooned over, 40FF 4 days. Skin softens - re-crisp to serve.
- Freezer: Flat quart with juices 3 months, 1 inch headspace, label
