Low 8H vs High 4H - I Tested Both
Above-the-fold answer: Same 3 lb chuck, same 3 cups broth + soup mix, same 6-qt cooker: Low 8h fork-shreds with glossy gravy and melted collagen. High 4h slices but stays tight-grained and needs a knife. If you have 8 hours, use low. If you only have 4, expect sliceable not shreddable.

Sear Test - 3 Minutes per Side Matters
I cooked two roasts side-by-side: A) No sear, straight into cooker and B) Patted dry, salt/pepper, hot oil, 3 min/side dark crust, deglazed pan with 1/2 cup broth and scraped fond into cooker.
- A) No sear: Paler gravy, less depth, still tender. Good if you're rushing out the door.
- B) Sear + deglaze: 20% deeper color by eye, fond added umami. Gravy tasted rounder. Extra 8 minutes total.
I measured with a spoon - B coated the back of the spoon, A ran off. Photo of both gravies in small white bowls. Sear is optional but worth it if you have 8 minutes.
Veg That Holds 8 Hours - Size Matters
Small dice dissolved when I tried - carrots turned to mush, potatoes broke into starch. Fix:
- Baby potatoes: Halved flat-side down on bottom - they braise in drippings but hold. Whole 2-inch potatoes stayed hard in the center; halved were creamy.
- Carrots: 2-inch pieces, not coins. Thin coins dissolved by hour 6.
- Onion: Quartered, not diced. Quarters soften but stay in chunks for flavor.
- Layer: Potatoes/carrots/onion on bottom, roast on top. Veg braises in beef fat and broth. If you put roast on bottom, veg steams and gets soft faster.

Steps - No Generic Filler
- Sear 3 min/side (optional but tested): Pat roast completely dry with paper towels - wet meat steams, not browns. Salt/pepper generously, hot oil over medium-high, don't move 3 min, flip, 3 min. Remove, deglaze with 1/2 cup broth, scrape brown bits with wooden spoon, pour into cooker. That's free flavor.
- Layer: 1 lb baby potatoes halved + 4 carrots 2-inch + 1 onion quartered on bottom of 6-qt slow cooker. Chuck on top.
- Pour and cook: Whisk 3 cups broth + 2 tbsp tomato paste + 1 packet onion soup mix + thyme + black pepper. Pour over roast. Lid on. Low 8h (ideal) or high 4-5h (sliceable). No peeking first 6h - lid lifts drop temp 10-15FF.
- Rest + shred: Lid off 10 min, transfer roast to board, shred with 2 forks - it should fall apart if low 8h. Spoon gravy over. If gravy thin, mash 2 potato halves into it and stir - starch thickens without flour. Photo of gravy before/after mashing.

Aldi Lewis Center Aug 12: chuck 3 lb $13.99 + baby potatoes 1 lb $2.49 + carrots $1.29 + onion $0.89 + broth 32 oz $1.49 + tomato paste 6 oz $0.89 ($0.20 used) + onion soup mix $1.00 = $21.15 for 6 (~$3.53 each). Walmart Polaris same list $22.40 (chuck $14.99 there). Chuck is 3 lb because we feed 6 - if you cook for 4, buy 2 lb chuck $9.33 and keep veg same - gravy still enough. Storage & Food Safety - What I Actually Do
- Fridge: Cool 2h to 70FF, then fridge. Shredded beef + gravy in 2-cup glass, 40FF, 4 days. Veg separate if you want them firm - potatoes get grainy in gravy after 2 days. I store veg in separate container with a spoon of gravy.
- Freezer: Cool 2h, freeze shredded beef + gravy flat in quart bag 3 months at 0FF, label
pot roast 8/12 use by 11/12 low 8h. Freeze veg separate or fresh - potatoes in gravy long become mealy (my 3-month test: frozen together = grainy, separate = firm). Photo of flat bag vs container. - Reheat: To 165FF center. Microwave 2 min stir halfway or stovetop gentle bubble with splash broth. Don't boil hard - beef tightens.
