Sunday 2-Hour Prep - What I Do First
Not generic “meal prep” - just 4 tasks that save 10 min each night:
- Rice: Cook 4 cups dry → 11 cups cooked. Cool, fridge in 2 containers. Use Mon + Thu.
- Onions: Dice 3, fridge in glass - covers Mon, Tue, Wed, Fri.
- Beans: Rinse 2 cans chickpeas/white beans, fridge. Warm last 2 min so they stay firm.
- Freeze: Slice bread, freeze half; shred cheese, freeze half bag flat.

What Went Wrong / What Worked
- Fail: Forgot to freeze bread - half loaf stale by Wed. Fix: freeze day one in freezer bag, toast from frozen.
- Win: Thighs over breast - $0.50 cheaper per lb and forgiving if simmer goes 2 min long.
- Time saver: Chop onion while pan heats, measure rice while chicken rests - saves 10 min standing.

Storage & Food Safety - Specific to This Plan
- Fridge: All dinners cool within 2h, shallow 2-cup glass, 4 days max. Thu fried rice uses Mon leftover within 3 days - so no waste.
- Freezer: Saucy dinners (Mon soup, Tue pasta sauce) flat in quart bags 3 months. Rice frozen separate if not used in 3 days - see how to freeze without freezer burn for the headspace trick.
- Reheat: To 165FF center, not edge. Add 1 tbsp broth when microwaving rice.
