Instructions

  1. Label bags/pans first - name, date, cook temp/time.
  2. Assembly line: chop all veg, portion meat, season bags (see timeline).
  3. Freeze flat on sheet pan 2h, then stack upright.
  4. Thaw overnight in fridge on a plate; cook to 165FF center.
  5. Freeze rice/pasta separate from sauce to avoid gummy texture.

Don't freeze everything the same way. This is how I split 10:

Sunday 2-Hour Assembly Line - My Timer

Before you start: wash bags, tape table, Sharpie, sheet pan, scale.

  • 0:00-0:15 - Label: 5 bags/pans: name, date, temp/time, use by Nov 25. Photo of my 5 labels.
  • 0:15-0:45 - Chop: 3 onions, carrots, measure spices into small cups - one mess, one board wash.
  • 0:45-1:15 - Portion: 3 lb thighs into 2 bags, 2 lb beef into 2 bags + 1 pan - weigh for even 1 lb each.
  • 1:15-1:45 - Season & Seal: Add sauces per card, remove air with straw, seal. Press flat 1 inch.
  • 1:45-2:00 - Freeze & Clean: Flat on sheet pan, into freezer; board and cups washed while bags freeze.

I check thickness with a ruler - 1 inch is the target. Thicker bags thawed uneven when I tried 2 inches.

How I Cook From Frozen - No Guessing

Raw dump bags: Thaw in fridge 12h on a plate (never counter). Skillet: brown, add bag contents, simmer 12-15 min to 165FF. Soup: dump bag + 2 cups water/broth, simmer 15 min.

Bakes: Thaw overnight, then 350FF covered 15 min, uncover 3 min to brown cheese. If cooking from frozen (forgot to thaw): 375FF covered 35 min, then uncovered 10 min - center must hit 165FF, I probe center not edge. Photo of probe at 165FF.

Rice trick: Freeze rice separately in its own flat bag. When I froze rice in sauce, it went mushy. Now sauce bag + rice bag side-by-side, combine after reheat.

What Failed

Thick bag (2 inches) froze with an icy core and took 24h to thaw - flat 1 inch thaws by dinner next day. Single foil-only bake had ice on edges at 3 weeks; double-wrap (plastic on surface + foil) had no crystals at 8 weeks - same freezer.

Physics note (diagram-ready): Liquid expands ~9% frozen. A 1-quart (32 oz) soup without 1 inch headspace bulged and popped my seam Aug 1. I now fill to 1 inch below zip and press air out with a straw - seam held 0/5 pops after fix vs 1/5 before.

The plastic-on-surface trick blocks sublimation where air touches food. The foil+lid then protects the plastic.

I keep this in a small notebook on the freezer. Crossing off forces FIFO - nothing lost for 6 months.

How Long Each Type Keeps (Reference, Not Guess)

From USDA FoodSafety.gov frozen storage guidance at 0FF, verified against my 0FF chest freezer thermometer:

  • Soups/sauces in bags: 3 months best quality (safe to 6, flavor thins after 3)
  • Pasta bakes double-wrapped: 2-3 months (cheese edge dries after 3)
  • Raw dump bags: 3 months (seasoning best inside 3, salt draws moisture after)
  • Cooked rice/grains flat: 2 months (texture softens after)

Always label Name | Date | Reheat 165FF and use FIFO. Reheat center to 165FF with an instant-read probe - not edge bubble.
