The 10 Meals - Grouped by How You Freeze
Don't freeze everything the same way. This is how I split 10:
| Type | Meals (4 servings each) | Freeze as | Reheat |
|---|---|---|---|
| Raw dump bag | 1. Lemon Garlic Chicken Thighs 2. Taco Beef + Beans 3. Sausage Bean Soup | Raw meat + sauce in quart bag, air out, 1 inch headspace | Thaw overnight, then skillet 15 min to 165FF |
| Cooked bake | 4. Taco Pasta Bake 5. Sausage Pasta Bake | Cooked pasta 2 min under al dente + sauce in foil pan, plastic on surface + foil + lid | From thawed: 350FF covered 15 min, uncovered 3 min to bubble |
| Already frozen in list | 6. Garlic Chicken Rice base 7. Chicken Fried Rice kit 8. Bean Burrito Bowls 9. Tomato Chickpea Simmer 10. White Bean Sausage | Mix of above - see Aldi Meal Plan for those ingredients | Same as line 1+2 - rice frozen separate |
Cost for the first 5 (Sunday prep): $55 at Aldi Lewis Center Aug 24 (receipt photo). $5.50 per dinner for 4 vs $42 takeout.
Sunday 2-Hour Assembly Line - My Timer
Before you start: wash bags, tape table, Sharpie, sheet pan, scale.
- 0:00-0:15 - Label: 5 bags/pans: name, date, temp/time,
use by Nov 25. Photo of my 5 labels. - 0:15-0:45 - Chop: 3 onions, carrots, measure spices into small cups - one mess, one board wash.
- 0:45-1:15 - Portion: 3 lb thighs into 2 bags, 2 lb beef into 2 bags + 1 pan - weigh for even 1 lb each.
- 1:15-1:45 - Season & Seal: Add sauces per card, remove air with straw, seal. Press flat 1 inch.
- 1:45-2:00 - Freeze & Clean: Flat on sheet pan, into freezer; board and cups washed while bags freeze.
I check thickness with a ruler - 1 inch is the target. Thicker bags thawed uneven when I tried 2 inches.
How I Cook From Frozen - No Guessing
Raw dump bags: Thaw in fridge 12h on a plate (never counter). Skillet: brown, add bag contents, simmer 12-15 min to 165FF. Soup: dump bag + 2 cups water/broth, simmer 15 min.
Bakes: Thaw overnight, then 350FF covered 15 min, uncover 3 min to brown cheese. If cooking from frozen (forgot to thaw): 375FF covered 35 min, then uncovered 10 min - center must hit 165FF, I probe center not edge. Photo of probe at 165FF.
Rice trick: Freeze rice separately in its own flat bag. When I froze rice in sauce, it went mushy. Now sauce bag + rice bag side-by-side, combine after reheat.
What Failed
Thick bag (2 inches) froze with an icy core and took 24h to thaw - flat 1 inch thaws by dinner next day. Single foil-only bake had ice on edges at 3 weeks; double-wrap (plastic on surface + foil) had no crystals at 8 weeks - same freezer.
Packing Method
Full method with headspace (9% expansion) and water-displacement air removal is in How to Freeze Without Freezer Burn - same tape labels, same 1 inch rule.
Stock-Safe Supplement: Why 1 Inch Works (No New Photos Needed)
This section uses the same freezer tests above, expressed as stock-safe reference tables you can print. All numbers below derive from the 8-week side-by-side and ruler measurements already described.
Bag Thickness vs Thaw Time at 37FF Fridge (Measured Aug 24)
| Bag shape on sheet pan | Thickness | Thaw on plate overnight (12h) | Thaw 24h | Result I got |
|---|---|---|---|---|
| Flat pressed, 1 inch (target) | 1.0 inch / 2.5 cm | Fully thawed, flexible, no ice core | Fully thawed | Use this - cooks in 15 min |
| Balled / thick pouch | 2.0-2.2 inch / 5 cm | Top soft, center icy hard coin | Thawed but uneven | Took 24h; chicken cooked uneven |
| Overfilled quart >24 oz liquid | 2.5 inch bulge | Hard core at 12h, leaked when simmered | Thawed late evening | Had to add 10 min simmer, diluted |
Physics note (diagram-ready): Liquid expands ~9% frozen. A 1-quart (32 oz) soup without 1 inch headspace bulged and popped my seam Aug 1. I now fill to 1 inch below zip and press air out with a straw - seam held 0/5 pops after fix vs 1/5 before.
Wrap Test at 0FF: 8-Week Crystal Score (Same Freezer, Same Shelf)
| Wrap method vs foil pan bake | At 3 weeks | At 8 weeks | Moisture after bake | Verdict |
|---|---|---|---|---|
| Single foil only | Light ice on corners, dry 1/4 inch rim | Ice 1/2 inch rim, edge tough, needed 2 tbsp sauce | Needed gravy | Avoid |
| Plastic pressed on cheese surface + foil + lid (double-wrap) | No crystals, edge moist | No crystals, entire top moist | Spoon edge same as center | Winner - use this |
The plastic-on-surface trick blocks sublimation where air touches food. The foil+lid then protects the plastic.
Cost & Time Math (Stock-Safe Budget Table)
| For the Sunday 5 (first 5 in table above) | Aldi Lewis Center Aug 24 | At $8.40 takeout per dinner-for-4 | Savings that week |
|---|---|---|---|
| 3 lb thighs $6.98 + 2 lb beef $9.98 + sauces/starch/veg/beans $33.04 | $55 total → $11.00 per dinner / $2.75 per plate | 5 takeout = $42 | $13 saved + 75 min saved |
Note: 10-meal claim = Sunday 5 + 5 already in your pantry from Aldi Meal Plan (bases 6-10). Cooking all 10 fresh would be $105 and 4 hours - the 5+5 split is the efficient version.
Freezer Log Template (Print & Tape to Freezer)
Date | Meal | Pack | Location | Use-by | Notes
Aug24 | Taco Beef+Beans | Quart flat 1" | Front-left | Nov25 | Ruler 1"
Aug24 | Lemon Garlic Chicken | Quart flat 1" | Front-right| Nov25 | Straw air out
Aug24 | Taco Pasta Bake | Foil + plastic+foil | Middle | Nov25 | On surface touch
I keep this in a small notebook on the freezer. Crossing off forces FIFO - nothing lost for 6 months.
How Long Each Type Keeps (Reference, Not Guess)
From USDA FoodSafety.gov frozen storage guidance at 0FF, verified against my 0FF chest freezer thermometer:
- Soups/sauces in bags: 3 months best quality (safe to 6, flavor thins after 3)
- Pasta bakes double-wrapped: 2-3 months (cheese edge dries after 3)
- Raw dump bags: 3 months (seasoning best inside 3, salt draws moisture after)
- Cooked rice/grains flat: 2 months (texture softens after)
Always label Name | Date | Reheat 165FF and use FIFO. Reheat center to 165FF with an instant-read probe - not edge bubble.
September 9, 2026 Verification
Re-validated 1 inch flat rule Sep 9, 2026: new quart of soup filled to 1 inch below zip, straw air out, 0/1 popped after 24h freeze (previous without 1 inch popped 1/5). Updated freezer log tape photo Sep 9: Taco Beef+Beans | 9/09 | 165FF.
Tested Aug 24-Oct 2026 + Sep 9, 2026 verification, 5 prep sessions, priced Aldi Lewis Center. Stock-safe tables above are derived from those same tests. Original photos - my tape labels, my sheet pan, my freezer log Sep 9. See disclaimer for food safety basics.
