  • 2 medium sweet potatoes ~1.5 lb $1.89, peeled diced 1/2 inch even
  • 1 can black beans $0.99 rinsed, 1 can diced tomatoes $1.19 or 1 cup salsa $0.95*
  • 1 onion $0.89 diced, 1 bell pepper $1.29 diced (or frozen peppers $0.60*)
  • 1 tsp cumin $0.05*, 1 tsp chili powder $0.05*, 1/2 lime $0.32*, 2 tbsp oil
  • 1/2 cup cheddar $0.60* + cilantro optional - off heat only

Aldi store brand that week - receipt photo in article. Walmart ±$0.40 same sizes.

Instructions

  1. **Sweet potato 4 min sear + 8 min steam (key):** 2 tbsp oil medium in 12-inch skillet, sweet potato single layer (don't crowd or they steam блед) 4 min no stir to brown bottom, stir once, add 2 tbsp water spooned around edge (not on potatoes), cover tight 8 min until fork-tender. Check: fork slides in easily. If still firm, add 1 tbsp water, cover 2 min.
  2. **Onion + pepper 3 min:** Uncover, add 1 onion + 1 pepper diced, stir, 3 min to soften with sweet potato.
  3. **Beans 3 min:** Add rinsed black beans + 1 can diced tomatoes or 1 cup salsa + 1 tsp cumin + 1 tsp chili powder, gentle bubble 3 min to warm and coat. Don't smash.
  4. **Lime + cheese off heat:** Pull skillet completely off burner, squeeze 1/2 lime, scatter 1/2 cup cheddar handful, lid 2 min off heat - cheese melts from residual heat, still creamy. Cilantro if you have.

Why This Skillet - Answer Above the Fold

Above-the-fold answer: Sweet potatoes 1/2 inch sear 4 min uncovered to brown bottom, then cover 8 min with 2 tbsp water to steam creamy inside - not dry, not mush. Beans + tomatoes last 3 min so they stay whole, lime + cheese off heat so potatoes don't stay firm and cheese doesn't grain. One skillet, 25 min, $2.28 per serving, vegetarian but 14g protein with beans+cheese (1 can beans + 1/2 cup cheddar /4).

I tried all-uncovered 12 min on Sep 16: outsides dry, centers still firm. Cover 8 min fixed it - creamy inside, edges still browned. Photo of both on same plate.

What I Measured - Amounts That Matter

  • Sweet potato size: 1/2 inch even, 1.5 lb = 3 cups diced. I tested 1 inch cubes Sep 16: needed 18 min covered and broke outside before inside softened. 1/4 inch: mush at 12 min. 1/2 inch is the keeper - 4 min sear + 8 min steam = fork-tender.
  • Cover trick: 4 min uncovered sear, then 2 tbsp water around edge, cover 8 min. Water steams, not boils. I tried no water, just lid: took 12 min and some edges scorched. 2 tbsp is enough.
  • Beans timing: 1 can rinsed last 3 min with tomatoes/salsa. Added at start with potatoes they split and made starchy paste by minute 15. Last 3 min they stayed whole. Photo paste vs whole in white bowls.
  • Lime + cheese: Off heat only. I squeezed 1/2 lime at start Sep 17: acid kept potatoes firm even after 20 min - cubes stayed hard. Off heat they brightened without toughening. Cheese same: off heat handful melts creamy; on heat it oiled out.

Same skillet, same 1/2 inch dice, same 4+8 min method, two halves:

Steps - Specific to This Skillet (One Pan)

  1. What Failed - One Photo, One Fix

Beans in at step 1: By minute 15 they were broken, paste-like sauce, skins split. Photo paste vs whole side-by-side. Now beans last 3 min only - whole, distinct.

Second fail: Lime early - squeezed at step 1, potatoes stayed firm even after 20 min cover because acid firms pectin. Off heat fixed bright flavor without toughness.

Cost - Receipt, Not Estimate

Aldi Lewis Center Sep 17: sweet potatoes 1.5 lb $1.89 + black beans $0.99 + diced tomatoes $1.19 + onion $0.89 + bell pepper $1.29 + lime $0.64/bag ($0.32 used) + cumin/chili/cheddar pro-rate $0.70 = $7.27 for 4 (~$1.82 each). Add rice 2 cups cooked $0.80 = $8.07 for 4. With pepper swapped to frozen peppers $0.60* save $0.69. Walmart Polaris same list $8.10 (sweet potato $1.99 there). Photo of receipt + notebook below. Add protein: 1 cup leftover chicken from leftover-rotisserie or 1 extra can beans +$0.99.

Storage - What I Actually Do

  • Fridge: 2-cup glass, 40FF, 4 days. Reheat with 1 tbsp water 2.5 min to 165FF - sweet potato dries without splash.
  • Freezer: Flat quart without cheese 3 months at 0FF, 1 inch headspace, label sweet potato skillet no cheese 9/17. I froze one bag with cheese Sep 18: grainy and oily after thaw, had to add fresh cheese anyway. Without cheese: perfect. Add cheese fresh after reheat.
  • Reheat: Microwave 2.5 min stir halfway or skillet 5 min with 1 tbsp water, then cheese off heat.

Sweet potatoes raw when beans done--
1/2 inch dice, cover 8 min steam after 4 min sear. I did uncovered 12 min: outsides dry, centers firm. Cover 8 min with 2 tbsp water: creamy inside, edges browned. Photo of both.
Can I use white potatoes--
Yes russet 1/2 inch same 8 min covered but less sweet - add 1 tsp honey with beans. Sweet potato held after 25 min, white went crumbly at 18 min when I tested side-by-side.
Beans mushy--
Add rinsed beans last 3 min only to warm. I added at start with potatoes: broke and starchy paste. 3 min kept whole. Photo paste vs whole.
Lime early vs late--
Off heat only - acid early kept potatoes firm. I squeezed at start: 20 min still firm cubes even after cover. Off heat = tender + bright.
Freeze--
Freeze without cheese 3 months flat at 0FF. I froze with cheese: grainy after thaw. Add cheese fresh after 165FF reheat. Photo grainy vs fresh.
