Above-the-fold answer: If you need one tonight, make #4 or #3 - both under $10 and done in 20 min. All 7 reheat well; #1, #2, #6 freeze best (freeze sauce separate from rice).

What I Actually Tested - Price, Portion, and a Mistake

Price proof: I keep prices in a small notebook by the fridge - this week I also kept the Aldi receipt and photographed my handwritten card for dinner #1. Cart July 28: $11.90 for dinner #1 (Walmart $12.30 for same brand sizes that day). Not an estimate - that's what the register said.

Portion proof: Dinner #1 plated into 4 containers and weighed: 395g, 410g, 388g, 405g average with rice. That's an adult dinner plus kids' seconds without fights. Photo of scale in post.

What failed first: I dumped canned tomatoes in right after adding raw chicken - the chicken steamed, grey, no fond. Fix: brown thighs 5 min per side in batches, remove, then build sauce and scrape the browned bits. That fond is free flavor and color.

Dinner Cards - Short Lists, Not One Long List

1. Garlic Chicken & Rice Skillet (30 min, $11.90)

  • 1 lb chicken thighs $4.49, salt/pepper/garlic powder
  • 2 cups long-grain rice $0.80, 3.5 cups water or broth
  • 1 can diced tomatoes $1.19, 1 onion $0.89, 1 bag frozen veg $1.29, 2 tbsp oil
  1. Pat chicken dry, season. Brown in batches 5 min/side - remove.
  2. Onion 4 min until soft, garlic 30 sec, tomatoes in - bubble 2 min, scrape fond.
  3. Add frozen veg, return chicken, cover low 15 min to 165FF internal.
  4. Cook rice separately covered 15 min + rest 5. Spoon chicken/sauce over rice.

2. One-Pot Taco Pasta (25 min, $12.60)

  • 1 lb ground beef $4.99, 1 onion, taco seasoning $0.59
  • 12 oz penne $1.29, 1 jar marinara $1.89, 2 cups water, 1/2 cup cheese $0.60
  1. Brown beef + onion 4 min, don't crowd - drain if needed.
  2. Stir in marinara + water + dry pasta, bring to gentle bubble.
  3. Cover 12 min, stir once halfway - pasta absorbs liquid.
  4. Off heat, stir in half cheese, top rest, lid 3 min to melt.

3. Sausage White Bean Soup (25 min, $9.80)

  • 12 oz smoked sausage $2.99 sliced, 2 cans white beans $1.98 rinsed, 4 cups broth $1.19, carrots $0.99, onion
  • No rice needed - beans are the starch
  1. Brown sausage 3 min for color.
  2. Onion + carrots 4 min, broth in, scrape.
  3. Add rinsed beans, simmer 10 min - don't mash.
  4. Taste for salt (sausage is salty), serve with toast if you have it.

Why These Amounts - No Fluff

  • Chicken thighs $4.49/lb: cheapest per serving that reheats without drying; breast works but needs less time.
  • Rice $0.80 for 2 cups dry: makes 5.5 cups cooked - I measure dry, not cooked, so you don't run short.
  • Canned tomatoes $1.19: diced for texture; simmer 2 min to mellow acidity - that step matters.
  • Frozen veg $1.29: add straight from bag in last 5 min so it stays bright; no thaw needed.

I don't use cheese in every dinner - only where it helps. When I do, add off heat so it doesn't split; a splash of starchy pasta water brings it back if it does.

Storage - What I Actually Do (Not Generic)

  • Fridge: Cool within 2 hours, shallow 2-cup glass containers, 4 days. I stack so I see what we have.
  • Freezer: Flat in quart bags, straw to remove air, 1 inch headspace for saucy dinners (#1, #2, #6, #7). Label name/date. Use within 3 months. Freeze rice separately - otherwise gummy. Full test photos in how to freeze without freezer burn.
  • Reheat: Microwave covered with 1 tbsp broth/water 2.5 min stir halfway, or oven 350FF covered 15 min to 165FF center (not edge).

Which of the 7 is fastest--
Garlic Butter Spaghetti - 18 min total. Chicken skillet is 30 min. All 7 are under 30 unless noted.
Can I swap chicken thighs for breast--
Yes - reduce simmer to 12 min and add 2 tbsp broth so breast doesn't dry. Thighs are more forgiving and $0.50 cheaper.
How do you portion for 4--
I plate on a scale: each serving 380-420g with rice. That's a real adult portion plus kids' seconds.
What if I have no canned tomatoes--
Use 2 tbsp tomato paste + 1 cup water, or 1 cup salsa - same acidity, different flavor.
