2 Hours, 5 Dinners + 5 Lunches - Phased, Not Chaotic
Above-the-fold answer: 2 hours gives you 5 dinners for 4 + 5 single lunches. Total $83 at Aldi Lewis Center Sep 2-8. Dinners: 2 fridge + 3 flat-frozen. Lunches: grains cool fully first, greens on top, dressing separate or they wilt by day 2.
0:00-0:30 - Chop: Carrots 1/2 inch, potatoes halved, 3 onions diced - all that keeps 4 days. No lettuce now (wilted day 3 when I tried). Start 4 cups dry rice → 11 cups cooked. Photo of day-3 wilted lettuce vs day-3 carrots still crisp.
0:30-1:00 - Protein: Chicken thighs in marinade (oil + garlic + lemon 30 min), ground beef browned 4 min, sausage roasted with potatoes. At same time spread cooked grains on sheet pan 20 min to cool - steam = soggy. Photo of steam rising off pan.
1:00-1:30 - Grains & Roast: Rice covered 15 min + rest 5; sheet pan chicken + potatoes at 425FF 25 min. While those run, grill lunch chicken 6 min/side to 165FF (pull at 160FF, carryover to 165FF, probe center). Wash board.
1:30-2:00 - Assemble: 5 dinner glass 3-cup: 2 fridge (Mon-Tue), 3 freezer bags flat (Wed-Fri). Label Mon chicken rice 9/8 use by 9/11. Then 5 lunch 2-cup glass: grains bottom, chicken, beans/carrots, greens on TOP not under dressing, 2oz dressing cup beside. Soup portions in quart bags flat, not bowls. Lunches: No-Soggy Rules (Merged from Make-Ahead Lunches)
| Lunch | Container | Keeps | Cost | Reheat |
|---|---|---|---|---|
| Mon Grain Bowl (chicken + rice + carrots) | 2-cup glass | 4 days fridge | $3.60 | 2 min +1 tbsp water, check 165FF |
| Tue Wrap + carrot sticks | 2-cup glass + wrap foil | 4 days | $3.40 | Cold or 45 sec |
| Wed Bean + Greens Bowl | 2-cup glass | 4 days | $3.20 | 2 min |
| Thu Soup (chicken veg) | quart bag flat | 3 months freezer | $2.80 | Thaw overnight, bubble 6 min |
| Fri Soup (bean) | quart bag flat | 3 months freezer | $2.70 | Same |
Why this works: I tested warm boxing vs cool-then-box. Warm grains boxed immediately = condensation, wilted greens by day 2, gummy rice. Cooled 20 min on sheet pan, greens on top, dressing separate = crisp day 4. Photos side-by-side day 2 vs day 4.
Fridge vs Freezer Split (Dinners + Lunches)
- Dinners: Mon-Tue in fridge; Wed-Fri flat-frozen on sheet pan then stacked upright. Thaw Tue night on plate in fridge (12h). I tried 5 fridge - Fri was off-smell day 5. Now 2+3.
- Lunches: Mon-Wed bowls fridge; Thu-Fri soups freezer → move to fridge Wed night. Grain bowls with greens don't freeze - texture fails.
