Instructions

  1. Hot pan 5 min: Empty half-sheet + parchment in 425F oven. Pat thighs bone-dry, salt and paprika 5 min uncovered.
  2. Par-cook rice 10 min: 1.5 cups rice + 2.25 cups broth, boil then cover low 10 min, off heat 5 min.
  3. Arrange spaced: Hot pan out, 1 tbsp oil, thighs skin-up 1 inch apart, onion half-moons, roast 16 min.
  4. Add veg and rice last 12 min: Spread par-cooked rice around chicken, add frozen veg, drizzle oil, roast 12 min to 165F. Brush butter off heat, rest 5 min.

One Pan, Crispy Skin + Fluffy Rice -- Answer Above the Fold

Hot half-sheet, thighs skin-up, rice par-cooked then finished on the same pan. Aldi $12.40 for 4 ($3.10 each), 38 min, probe 165FF. Rice stays fluffy because it goes on late, skin crisps because pan is hot and thighs are dry.

I weighed plates: 445g, 428g, 452g, 438g -- 410-450g is a real adult plate with rice.

Steps -- Specific to This Pan

  1. Hot pan + pat dry 5 min: Empty half-sheet + parchment in oven at 425FF. Pat thighs with paper towel bone-dry, salt + paprika 5 min uncovered on rack -- skin dries, crisps.
  2. Par-cook rice 10 min: 1.5 cups rice + 2.25 cups broth pinch salt, boil, cover low 10 min, off heat 5 min -- 80% done, grains separate. Keep covered.
  3. Arrange spaced 28 min: Hot pan out (caution), 1 tbsp oil on parchment, thighs skin-up center 1 inch apart, scatter onion half-moons. Roast 16 min.
  4. Add veg + rice last 12 min: Spread par-cooked rice around chicken, scatter frozen veg straight from bag on rice, drizzle 1 tbsp oil. Back in 12 min -- thighs probe 165FF center, rice finished, veg bright. Brush 1 tbsp melted butter off heat, rest 5 min on pan.

What Failed

Cold pan thighs steamed -- skin pale rubbery, potatoes/starch not relevant but rice would not finish. Photo pale vs gold skin. Now hot pan always. Second fail: dry rice on pan + water pooled -- rice only half cooked at 28 min when chicken done, I had to pull chicken and steam rice 10 min more. Now par-cook.

Rice mushy on sheet pan--
Par-cook rice 10 min covered (2.25 cups broth) then spread on pan last 12 min -- fluffy not gummy. Dumping dry rice on pan steamed uneven and needed 35 min, rice still hard edge.
Crispy skin without frying--
Pat thighs bone-dry, salt 5 min before, hot pan + skin up 28 min at 425FF. Cold pan skin stuck. Dry + hot = 340FF contact, sizzle audible. Photo IR 155FF hot pan vs 85FF cold.
Can I use breast--
Yes but pull 5 min early -- breast to 165FF at 23 min vs thighs forgiving to 168FF juicy. Thighs cheaper $5.99 for 1.5 lb vs breast $6.99.
Freeze leftovers--
Cool 2h, flat quart 1 inch headspace, rice separate from chicken 3 months. Reheat oven 350FF 12 min covered to 165FF center -- microwave makes skin soggy.
Crowded pan problem--
Overlap dropped IR to 295FF steamed pale. 1 inch space single layer held 340-355FF and browned. Use two pans if doubling -- photo crowded vs spaced same oven.
