The Five Minute Jar Trick

Let us be brutally honest. There is absolutely no reason to ever buy bottled salad dressing again. I know the plastic bottles are convenient. But have you actually read the ingredient list on the back of that neon brown liquid? It reads like a chemistry textbook. We can do better, and it takes exactly five minutes.

When I was navigating the absolute nightmare of gestational diabetes, I had to become obsessed with what I was pouring over my vegetables. Store bought dressings are usually packed with hidden sugars and cheap seed oils that just make you feel sluggish. This simple balsamic vinaigrette is my ultimate kitchen staple. It is real food, it tastes incredible, and it keeps your blood sugar completely happy.

The Mustard Secret Weapon

Here is the absolute magic of this recipe. You are mixing oil and vinegar. We all know oil and vinegar hate each other. They separate, they curdle, they make a sad puddle on your lettuce. But the recipe includes one tablespoon of Dijon mustard. Mustard is an emulsifier. It literally forces the oil and the vinegar to hold hands and become a creamy, cohesive dressing. You do not need a fancy immersion blender. Just a fork and a jar.

Pro tip from my tiny apartment. Put all the ingredients in a mason jar, screw the lid on tight, and hand it to your three year old. Tell them it is a science experiment. They will shake it violently for two minutes, and you get to drink your coffee while it is actually hot. Boom. Perfectly emulsified dressing and a distracted toddler.

A Blood Sugar Dream

Let us look at the nutrition label because it is genuinely beautiful. At only 81 calories per serving, you are getting 8 grams of healthy fat from the extra virgin olive oil and a mere 2 grams of carbohydrates. When I was managing my blood sugar, a dressing like this was my absolute holy grail. The tiny bit of honey is completely balanced out by the acid from the balsamic and the fat from the oil. It adds just enough sweetness to cut the tang of the vinegar without sending your glucose into the stratosphere.

Plus, the healthy fats actually help your body absorb all the fat soluble vitamins from your salad greens. You are literally making your vegetables more nutritious just by tossing them in this jar.

The Fridge Door Lifesaver

Keep this jar in the fridge door all week long. It stays good for days. Drizzle it over roasted sweet potatoes, use it as a marinade for chicken, or just pour it over that sad box of spinach you bought with the best of intentions. Shake it well before you use it, because it will separate in the cold. That just means it is real food without chemical stabilizers.

Five minutes of work. Zero cooking. A perfectly balanced dressing that makes you feel like you have your life completely together. Now go shake that jar and enjoy your salad.
