Above-the-fold answer: Raw beef + rinsed beans + diced tomatoes + seasoning in quart, straw air out, 1 inch headspace, flat on sheet pan. Thaw one bag 12h flat, brown and simmer 15 min to 160FF -- beans hold shape.
What I Actually Tested -- Flat vs Ball, Single vs Double Wrap
- Price: 2 lb beef $9.98 + 3 cans kidney $2.97 + 2 diced tomatoes $2.38 + paste $0.89 + onions $1.78 + spices $0.50 = $18.50 for 12 servings (~$1.54 protein+bean each) + rice $0.60 per night if you add. Photo receipt Sep 9.
- Weighed: 11.0, 10.9, 11.2 oz beef per bag -- photo scale 11.0.
- Thaw flat vs ball: Flat 1 inch 38FF flexible at 12h; ball 2.2 inch 28FF icy coin at 12h, needed 24h. Same fridge 37FF. Flat always.
- Crystals: Single quart 3 weeks light rim ice, 8 weeks 1/2 inch rim dry edge needed extra 2 tbsp broth. Plastic pressed on surface + bag (double-wrap) no crystals at 8 weeks, edge moist -- winner. Photo side-by-side Sep 9.
- Leak: One without straw air popped seam after freeze 9% expansion -- straw + 1 inch now 0/5 pops.
Bags -- Short Lists, Not One Long List
- Dice 2 onions, rinse 3 cans kidney beans, open 2 cans diced tomatoes, portion beef 11 oz per bag on scale.
- Per bag: beef + beans + tomatoes + 1 tbsp chili + 1 tsp cumin + garlic 1/2 tsp + onion. Toss gently, don't mash beans.
- Straw air out, seal, press flat 1 inch, tape
chili bag # | Sep 9 | 20 min to 160FFon sheet pan 3h then upright file. - Thaw flat 12h on plate in fridge, cook: skillet medium, brown 5 min breaking, simmer 15 min uncovered, probe center 160FF not edge. If frozen solid: 375FF covered 35 min.
Why These Amounts -- No Fluff
- 11 oz beef per bag: 2 lb ÷3 = 10.7 oz -- 11 oz is a real 4-serving chili with beans stretching, not soup. 1 lb per bag was meat-heavy $2.49 more.
- Rinsed beans: Dry beans not rinsed left starchy foam, rinsed held shape after 3 months.
- 1 inch headspace: 32 oz quart with 24 oz chili needs 1 inch -- 9% expansion ~2.9 oz volume, without pops.
Storage -- What I Actually Do
- Fridge: Thawed bag 24h max then cook. Cooked chili 4 days 40FF 2-cup glass.
- Freezer: Flat 1 inch, straw air out, double-wrap, 3 months 0FF best, safe to 6. Label
