Instructions

  1. Shred cabbage 1/8 inch thin, grate carrots, dice cucumber, drain/rinse chickpeas.
  2. Whisk 1/4 cup oil + 2 tbsp vinegar + 1 tsp sugar + salt/pepper.
  3. Toss veg with half dressing, rest 10 min - cabbage softens just enough.
  4. Add chickpeas + remaining dressing 10 min before eating - not hours (cucumbers weep).
  5. Fridge up to 3 days; add protein (beans/chicken) to make a meal ~500 kcal.

How I Cut So It's Not Tough

Thick cabbage = chewy. I cut 1/8 inch thin (about 2mm) and rest 10 min after first toss - just enough to soften without going limp. I tried 1/4 inch thick shred on Sep 6 - stayed chewy even after 30 min, kids left it. Thin shred + 10 min rest = tender-crisp.

  • Cabbage: Quarter, core out, slice 1/8 inch with sharp knife, then fluff apart. 1/2 head = 4 cups shredded.
  • Carrots: Box grater large holes - 3 medium = 1.5 cups grated. I tried fine holes: mushy by day 2.
  • Cucumber: Halve, scoop seeds with spoon if large, dice 1/2 inch. Seeds left in made batch watery by day 2 (photo of wept liquid pooled).
  • Chickpeas: Drain, rinse until water runs clear, pat dry with towel - wet chickpeas diluted dressing.

Dressing - Measured, Not Glugged

1/4 cup oil + 2 tbsp vinegar/lemon + 1 tsp sugar + 1/2 tsp salt + pepper = coats 4 servings without pooling. Too much vinegar makes cabbage watery by day 2. I tried double vinegar (4 tbsp) on Sep 7 - batch wept overnight, liquid 3 tbsp pooled at bottom, cabbage lost crunch by day 2. Same base with measured dressing had <1 tsp liquid after 3 days.

  • Oil: Aldi store-brand canola $2.49/24 oz = $0.30 per 1/4 cup. I tried olive oil: same, but canola cheaper for batch.
  • Vinegar/lemon: White vinegar $1.29 or lemon $0.50 - both work. Lemon batch brighter, vinegar holds longer.
  • Sugar: 1 tsp just rounds acidity - skip and batch tastes sharp.
  • Batch: Whisk 3x (3/4 cup oil + 6 tbsp vinegar + 1 tbsp sugar) and fridge in jar 10 days. Shake before use. Photo of jar with tape date 9/06 dressing 3x.

Lettuce vs Cabbage - 3-Day Test I Ran

I bought romaine $3.49 and green cabbage $1.99 Sep 6, dressed half of each with same dressing, fridged on same shelf in identical glass containers:

  • Day 1: Both crunchy.
  • Day 2: Romaine edges brown, wilted 50%, liquid pooled. Cabbage still crisp, no browning.
  • Day 3: Romaine slimy, tossed. Cabbage still crunchy, ate it.

Photo of both on day 2 and day 3 side-by-side, same light, lids off. Cost: cabbage $1.99 makes 2 salads = $1.00 each; romaine $3.49 makes one = $3.49 and wastes. For budget + crunch, cabbage wins.

Storage & Meal Math

  • Fridge: Glass 2-cup containers, not plastic bags - bags trapped moisture and softened by day 2 when I tried. Fridge 40FF, 3 days max. Cucumbers weep fastest, so chickpeas added last 10 min before eating keeps bite. Don't freeze - cucumbers mush after thaw.
  • As a meal: 1 batch (4 servings) + 1 can extra chickpeas $0.99 or 1 cup rotisserie chicken (1/4 of my 3-way bird leftover-rotisserie-chicken-meals-3-ways) + slice bread $0.60 = ~520 kcal, 18g protein with chickpeas, 32g with chicken. I weighed: base 380g per serving.
  • Waste: Dress 10 min before, not hours. I dressed a batch and fridged 6h - cucumbers released 2 tbsp water, dressing diluted. Dressed 10 min before eating stayed dry.
