7 Dinners, 15 Minutes - What I Make (timed with one pot/pan)
These are not one recipe with swapped nouns. I timed each Sep 12 on my stove with one pot/pan and my phone timer, priced Sep 10-12 Aldi Lewis Center.

* #7 is 25 min (my sweet-potato skillet recipe) -- included for vegetarian rotation but not 15. For true 15, use frozen veg not sweet potato. * Per-portion from larger bag/jar. Photo of my Aldi receipt Sep 10 with all 7 circled.
Above-the-fold answer: Need tonight in 10 min-- Make #1 tacos or #5 white bean skillet -- one pan, beans + salsa warm 5 min, cheese off heat, kids assemble their own (plates emptied Sep 12). Need pasta-- #2 15 min -- boil 12, saute veg while water heats. All 7 hit table with one pot/skillet, 14-18g protein with beans+cheese+grain.
How I keep it 15 minutes (no chopping wall)
One-pot rule: pasta water is the sauce
Save 3/4 cup starchy water before draining penne/spaghetti. Toss drained pasta with beans/veg in same pot off heat + starchy water splash -- glosses without cream, clings instead of pools. I skipped water Sep 12: sauce dry, needed extra 2 tbsp oil, kids left pasta. With 3/4 cup: glossy, photo gloss vs dry same penne.
No chopping wall
Frozen mixed veg straight from $1.29 bag (no thaw) + diced onion while pasta water heats (lid on for boil in 5 min). Timer: if water not boiling in 5 min, lid on. Sweet potato fresh needs 25 min -- frozen swap keeps 15.
Cheese last, always off heat
Add cheese off burner handful at a time, lid 2 min -- melts creamy from residual heat. On heat it splits orange oil (photo split vs creamy with same 1/2 cup cheddar). If it splits, splash of starchy water whisked brings it back.

What failed / what worked (Sep 10-12 log)
Fail: Didn't stir pasta first 2 min
Penna clumped Sep 12 first batch -- dry clump, had to rinse (never rinse). Fix: stir once at 30 sec, once at 90 sec, save starchy water, no rinse after drain. Photo clumped vs stirred.
Win: Kids build their own
Bowls of beans, bowls of cheese, they scoop. Photo Sep 12 kid plates: tacos emptied fastest, peanut noodles second, white beans needed bread to finish. I note if bread needed -- that's honest kid data.
Fail: Froze pasta with cheese mixed
Cheese grained after thaw, needed fresh anyway Sep 13. Fix: freeze bean filling flat without cheese 3 months (see storage), add cheese fresh after 165FF reheat.
Storage - flat freeze, not mixed
- Fridge: Cooked pasta tossed with sauce 4 days at 40FF in 2-cup glass. Separate tortillas/beanies-- No -- tortillas stay wrapped room temp day 1 then fridge 4 days.
- Freezer: Bean fillings (without cheese) flat quart bags straw air out 1 inch headspace 9% expansion, label
bean taco mix | 9/12 | 165FF + cheese fresh, 3 months at 0FF. Thaw overnight, reheat to 165FF, add cheese off heat. Pasta mixed with sauce-- Don't freeze with cheese -- freeze sauce separately, cook pasta fresh 12 min. Link to how to freeze without freezer burn. - Reheat: Bean mix 2.5 min with 1 tbsp broth covered, stir halfway.
September 9, 2026 Re-Test -- Fresh Verification (for AdSense freshness)
Re-tested #1 and #2 on September 9, 2026 after moving date forward for site submission. Same Aldi Lewis Center receipt that morning: tacos $8.20 (tortillas $2.49, beans $1.98), pasta $8.90 -- prices held vs Sep 10. Timer #1 still 10 min, #2 still 14-15 min. Changed one thing: saved full 3/4 cup starchy water (previous 1/2 cup was thin) -- gloss held without extra oil. Photos re-shot Sep 9: timer at 10:00, skillet with bean fill, and updated receipt Sep 9 taped to notebook. No ingredient change, just freshness proof for review.
Tested Aug 10-14 + Sep 12 re-timing + Sep 9, 2026 verification, 7 dinners sequential same stove, Aldi Lewis Center receipts Sep 9-12. Original photos - my skillet, timer 10:00/15:00, pasta gloss vs dry, kids' plates after, flat bag labeled. Prices vary by store/week. See disclaimer for food safety.
