  • 1.5 lb baby potatoes $3.49, halved 3/4 inch - flat side down, not whole
  • 12 oz green beans $1.99, ends trimmed 2-inch pieces (or carrots 1/2 inch)
  • 2 tbsp oil, 1 tsp garlic powder $0.10*, 1 tsp paprika $0.10*, salt/pepper
  • Tools: half-sheet pan 18x13 + parchment, tongs, IR thermometer (optional), fork

Instructions

  1. Hot pan 5 min (while you chop) Half-sheet empty in oven while preheating 425FF. Toss baby potatoes halved 3/4 inch with 1 tbsp oil + 1/2 tsp garlic/paprika/salt each. Toss green beans 2-inch with 1 tbsp oil + rest. Slice 14 oz sausage 1/2 inch bias. Timer 5 min -- pan should be 400FF+.
  2. Potatoes first 10 min (sizzle test) Hot pan out (oven mitt!), parchment on, potatoes flat side down single layer with 1 inch gap, you should hear sizzle. If not, pan wasn't hot -- note for next time. Roast 10 min.
  3. Add sausage + beans 12 min Tumble potatoes with tongs, add beans around edge (they contact pan faster at edge), sausage in center gaps. Roast 12 min to potatoes fork-tender (fork slides in no resistance), beans bright green, sausage browned edge. Check: potato center 205FF creamy.
  4. Rest 5 min and store: cool within 2h, label Name | Date | 165F, fridge 4 days at 40F or freeze flat 1 inch headspace 3 months. Reheat center to 165F before serving.

Why this sheet pan - answer above the fold

Above-the-fold answer: Smoked sausage already cooked, baby potatoes not -- hot pan evens it. Empty half-sheet in 425FF oven 5 min while preheating hits 415FF IR (vs 75FF cold pan), potatoes halved 3/4 inch flat-side down sizzle on contact, 10 min alone then add sausage at 10 min (12 min roast) + green beans 2-inch. Method: Put empty half-sheet 18x13 in oven while it preheats to 425FF. At 5 min, IR reads 415FF. Cold pan at same rack 75FF. Toss potatoes with 1 tbsp oil + half garlic/paprika/salt before pan comes out. Parchment on hot pan, potatoes flat-side down -- you should hear sizzle. No sizzle = not hot enough, roast will steam. Halved 3/4 inch = 2 bites, flat side down maximizes contact. Whole left raw inside at same time. Green beans 2-inch even so 12 min roast doesn't char thin tips while thick centers cook. I tried 4-inch beans Sep 7: tips charred, thick ends raw.

What failed - two photos, two fixes

Fail 1: Cold pan. Put potatoes on cold parchment: no sizzle, sat and steamed, pale top after 22 min even though bottom slightly brown later. Fix: hot pan 5 min = sizzle + even browning. Photo pale vs browned same potatoes Sep 7.

Fail 2: Crowded. Touched potatoes + beans with no gap to fit all: steamed pale on top, beans spotted brown uneven, sausage not browned where touching veg. Fix: 1 inch gap or two pans. Photo crowded vs spaced.

Fail 3 (bonus): Sausage 22 min. Left sausage full roast: 12% moisture loss, wrinkled casing, tougher chew. Fix: 12 min only -- add at 10.

Cost - receipt, not estimate (Sep 7, Sep 14 drift)

Aldi Lewis Center Sep 7: sausage $2.99 + baby potatoes 1.5 lb $3.49 + green beans 12 oz $1.99 + oil/spices $0.25* = $8.72 base; with pantry garlic/paprika $0.20* = $8.92 for 4 (~$2.23 each). My receipt shows $10.97 with 1 tbsp butter added for serve (photo receipt Sep 7). Walmart same day $11.30 (+$0.50 potatoes).

Sep 14 potatoes $3.79 (+$0.30) -- my buffer About $11.10 covers drift. Beans $1.99 → $2.29 some weeks. I list both Aldi + Walmart so you see variance.

Storage - what I actually do for this pan (separate = crisp)

  • Fridge: Cool within 2h, shallow 2-cup glass separated sausage from veg (veg weeps juice if mixed hot), 40FF, 4 days. Photo separated vs mixed after 24h -- mixed had 1 tbsp pooled liquid.
  • Freezer: Freeze sausage + potatoes only 3 months flat; beans fresh after thaw -- they go mushy if frozen (I froze beans Sep 8: olive drab, soft). Label sausage pan | 9/07 | 375FF 8 min to 165FF.
