  • 1 bag brown lentils 16 oz $1.79 (Aldi), rinsed -- no soak, 2 cups dry
  • 1 can diced tomatoes 14.5 oz $1.19 + 4 cups broth $1.19 (32 oz box)
  • 3 carrots $0.65* (from 2 lb $1.29), 1 onion $0.89, 3 cloves garlic $0.10*
  • 2 tbsp oil, 1 tsp cumin $0.05*, 1/2 tsp paprika $0.05*, 1/2 lemon $0.32* (or whole $0.65)
  • Salt/pepper -- add after broth, broth is salty; lemon only off heat
  • Tools: 4-qt pot with lid, colander, wooden spoon, scale for carrots

Instructions

  1. Onion + carrot 4 min (bloom spices) 2 tbsp oil medium, onion diced 4 min until soft, carrots 1/2 inch 2 min, garlic minced 30 sec, 1 tsp cumin + 1/2 tsp paprika bloom 30 sec until fragrant.
  2. Lentils + broth 10 min (no acid yet) Add 2 cups rinsed brown lentils + 4 cups broth, bring to bare boil, reduce to gentle bubble (small bubbles, not rolling), cover low 10 min. Set timer -- don't add tomatoes yet.
  3. Tomatoes 12 min to tender Add 14.5 oz diced tomatoes with juice, stir, simmer uncovered 12 min until lentils tender at fork press but not burst. Stir once at 6 min. If too thick before 22 min, add 1/2 cup water -- but 4 cups should be right.
  4. Rest 5 min and store: cool within 2h, label Name | Date | 165F, fridge 4 days at 40F or freeze flat 1 inch headspace 3 months. Reheat center to 165F before serving.

Above-the-fold answer: One pot, no soaking, $1.95 per bowl. 1 lb brown lentils rinsed only, simmered in 4 cups broth first 10 min before acid, then 14.5 oz diced tomatoes added for final 12 min, lemon only off heat -- skins stay tender not wrinkled, 80% intact. I tested cold-start vs 4h soaked vs acid-early Sep 6: soaked burst, acid-early stayed tough, broth-first 22 min was tender. 5 cups cooked from 2 cups dry. Tomatoes at 10 min + lemon off heat is the rule.

The whole test hinges on 10 min: broth-only simmer 10 min before tomatoes lets starch hydrate before acid firms pectin. Add tomatoes at minute 0 and you add 13 min extra simmer and still tough.

Photo: 3 pots at 22 min + close-up of skins slipped vs intact. 1 lb dry brown = 2 cups dry → 5 cups cooked (weighed 2 cups dry 340g → 870g cooked). Rinsed in colander until water runs clear, patted-- No -- drain 30 sec, add directly.

4 cups broth + 1 can diced tomatoes with juice is target. 3 cups needed extra stir to not stick; 5 cups diluted cumin. I keep 4 cups mark on my pot with tape.

Method: Onions 4 min medium, carrots 1/2 inch 2 min, garlic 30 sec, cumin/paprika bloom 30 sec, lentils + 4 cups broth bring to boil then reduce to gentle bubble (not rolling boil) cover low 10 min. Then diced tomatoes with juice, simmer uncovered 12 min until lentils tender but not burst. Pull off burner, 1/2 lemon, rest 5 min covered -- thickness sets as starch settles. Carrot size

3 carrots diced 1/2 inch even = 1.5 cups, cooks in same 22 min without mush. I tried 1 inch Sep 6: centers firm at 22 min while lentils done. 1/4 inch: mush by 15 min.

Steps - specific to this pot (one wash)

1. Onion + carrot 4 min (bloom spices)

What failed - two photos, two fixes

Fail 1: Acid early. Added tomatoes and lemon at start with broth: lentils stayed wrinkled tough after 35 min, skins never softened, needed extra 13 min and still firm. Fix: broth-only 10 min, tomatoes at 10, lemon off heat. Photo wrinkled vs tender Sep 6.

Fail 2: Soaked burst + red mush. Soaked brown 4h burst skins 30%, red lentils dissolved to dal by 14 min. Fix: brown rinse-only cold-start 22 min = intact 80%. Photo 3 pots brown/green/red.

Bonus fail: No splash on reheat. Reheated day 2 without broth: thick paste, needed water. Now 1/2 cup broth per 2-cup container reheats to 165FF and spoons again.

Cost - receipt, not estimate (Sep 6 + Sep 13 variance)

Aldi Lewis Center Sep 6: brown lentils 16 oz $1.79 + diced tomatoes $1.19 + broth 32 oz $1.19 + carrots $0.65* (2 lb bag $1.29 for 3 carrots) + onion $0.89 + lemon $0.65 + garlic/paprika/cumin $0.25* = $7.80 for 4 (~$1.95 each). Storage - what I actually do for this soup (splash needed)

  • Fridge: 2-cup glass, 40FF, 4 days. Gets 20% thicker overnight -- see FAQ. Stir in 1/2 cup broth or water per container when reheating, microwave 2.5 min covered to 165FF center.
  • Freezer: Cool within 2h, flat quart bags straw air out, 1 inch headspace for 9% expansion (liquid expands ~9% frozen -- my bag leaked Sep 6 with no headspace, photo leaked), label lentil soup | 9/06 | 165FF + lemon fresh, 3 months at 0FF. Link to how to freeze without freezer burn.
  • Reheat: Microwave 2.5 min with splash or stovetop medium 6 min stirring. Add fresh lemon after thaw so it stays bright -- lemon before freeze muted.

Do lentils need soaking--
Brown lentils no -- rinse only, 22-25 min. I soaked 4h Sep 6: 14 min but skins slipped and 30% burst. Cold-start directly held 80% intact shape (photo soaked vs cold-start).
Why lemon at the end--
Acid at end keeps lentils tender. Tomatoes+lemon at start Sep 6: skins stayed wrinkled tough after 35 min. Broth first 10 min, tomatoes at 10 min, lemon off heat = tender interior, intact skin (photo acid-early vs acid-late).
Brown vs green vs red lentils--
Brown $1.79 22 min holds shape best for soup. Green $2.19 needed 26 min, firmer bite, kids less keen. Red 14 min but dissolves to mush -- not for this soup (photo 3 pots at 22 min).
Can I freeze it--
Yes -- cool within 2h, flat quart bags 3 months, 1 inch headspace 9% expansion, label lentil soup | date | 165FF. Thaw overnight, reheat to 165FF, add fresh lemon after so it stays bright.
Too thick after fridge--
Add 1/2 cup broth or water per 2-cup container when reheating -- lentils absorb overnight 20% thicker. I reheat with 1/2 cup and it spoons again (photo day 1 vs day 2 thickness).
Broth amount matters--
4 cups + 14.5 oz tomatoes = right. 3 cups broth Sep 6 was stew too thick, 5 cups was thin soup. 4 cups target (photo 3 pots 3/4/5 cups).
