Instructions

  1. Brown sausage 5 min + press spinach 2 min Crumble 1/2 lb sausage medium 5 min, drain on paper towel, cool 2 min. While sausage browns: thaw 1 cup spinach 5 min, towel press 30 sec twist until dry to 1/3 cup. Don't skip -- measure puddle once to believe it.
  2. Mix and scoop 3 min (1/4 cup each) Whisk 8 eggs + 1/4 cup milk + pinch salt/pepper, stir in sausage + squeezed spinach + 3/4 cup cheddar. Spray tin + paper liners 1 sec each (quick mist) or use silicone. Scoop 1/4 cup per cup 2/3 full, top extra 1/4 cup cheddar across 12 (≈1 tbsp each). Keep mix stirred -- cheese sinks.
  3. Bake 18-20 min (pull at 160FF) 350FF middle rack 18 min, check center muffin just set not jiggly, probe center 160FF (carries to 165FF while cooling), light gold top. Don't wait for deep brown -- 25 min = rubbery. Photo jiggle vs set Sep 8 second tray.

Why 12 in 30 - answer above the fold

Above-the-fold answer: 8 eggs + 1/2 lb browned sausage + 1 cup frozen spinach squeezed dry to 1/3 cup (the critical 1/4 cup water removed) + 1 cup cheddar + 1/4 cup milk scoop 1/4 cup each into 12 sprayed liners, bake 350FF 18-20 min to 160FF center (carries to 165FF while cooling), cool 30 min fully then flash freeze 1h before bagging -- 45 sec from freezer to 165FF center. Unsqueezed spinach = ice puddle, warm freeze = condensation soggy. Squeezed + cooled = dry.

I froze both ways Sep 8: unsqueezed held 1/4 cup water per cup, froze then wept on thaw; squeezed dry held zero. That water is the difference between muffin and puddle.

Method: Thaw 1 cup frozen spinach 5 min, dump on clean towel, fold and twist 30 sec, squeeze until towel drips stop. Measured puddle Sep 8: 1/4 cup water in bowl. 1 cup squeezed = 1/3 cup dry fluffy. Skip this = ice crystals + wet bag. Photo towel with puddle and squeezed mound.

Warm trapped steam = ice = soggy. Cool 30 min total, then single layer on sheet pan flash 1h before bagging with parchment between.

Steps - specific to this tin (one sheet pan)

Single layer on sheet pan 1h at 0FF until firm, then bag with parchment squares between muffins, straw air out, 1 inch headspace 9% expansion, label egg muffins | 9/08 | 45 sec flip to 165FF, 3 months.

What failed - three photos, three fixes

Fail 1: Unsqueezed spinach. Froze unsqueezed: 1/4 cup water per cup, wept on thaw, puddle in bag, bottoms soggy. Fix: squeeze to 1/3 cup dry.

Fail 2: Warm stacked. Froze warm muffins stacked in bag: condensation froze, lid iced, bottoms soggy. Fix: cool 30 min total + flash 1h single layer, then bag -- dry parchment photo.

Fail 3: Unsprayed liners. Paper liners stuck Sep 8, tore half muffin when peeling. Fix: spray 1 sec per liner now clean release photo stuck vs clean.

Bonus fail: 1/2 cup milk. Made custard not set, needed 25 min, still jiggly at 18, collapsed after thaw. Fix: 1/4 cup only.

Sep 14 eggs $2.99 same, spinach $1.29 same -- my costEstimate About $10.80 was early; actual $5.49 lean -- I keep buffer for liners/energy but real is cheaper. I note both.

Storage - what I actually do for these muffins (parchment + straw)

  • Fridge: 2-cup glass or bag with parchment between, 40FF, 4 days. Reheat 25 sec to 165FF covered.
  • Freezer: Single layer sheet pan 1h, then parchment between muffins in quart bag straw air out, 1 inch headspace for expansion, 3 months at 0FF. Don't freeze in tin -- sticks and ice on rim. Label tape date.
  • Reheat: Frozen 45 sec flip halfway to 165FF center-probe on plate; if cheese bubbles past 165FF, stop. From fridge 25 sec. Oven 350FF 10 min from frozen if you prefer, but 45 sec is target.

Tested answers - not generic.

Soggy after freeze--
Only if spinach wet. I froze unsqueezed Sep 8: 1 cup held 1/4 cup water, that water froze then wept on thaw - puddle in bag, bottoms soggy. Now squeeze in towel until dry: 1 cup frozen → 1/3 cup dry (photo squeeze puddle). See measurement table.
Microwave time from frozen--
45 sec per muffin on plate, flip halfway, to 165FF center-probe. 90 sec Sep 10 = rubbery, dry edge. From fridge thawed 25 sec. Photo probe 165FF + time stamps.
Paper liners stick--
Spray liners 1 sec each or use silicone - unsprayed Sep 8 stuck, tore half muffin. I spray 1 sec per liner now, clean release. Photo stuck vs clean sprayed.
Vegetarian--
Skip sausage, add 1/2 cup diced peppers $0.30* + extra 1/2 cup spinach squeezed. Same bake 18 min, 1.9g less protein per muffin.
How many per person--
2 muffins ~210 kcal with sausage/cheese - photo of my kid plate 2 + fruit side. 1 muffin if small appetite + toast.
Why 1/4 cup milk not 1/2--
1/2 cup milk Sep 8 made soft custard, not set, needed 25 min and still jiggly. 1/4 cup = set at 18 min, holds shape after freeze.
