Instructions

  1. Toast 4 min + sausage 6 min (parallel) Split 6 muffins, sheet pan 350FF 4 min until edges lightly tan, cool 10 min on rack. Same time: sausage patties 1/4 inch 3 min/side medium, drain. Leave oven on for eggs.
  2. Egg patties 12 min Whisk 6 eggs + 1 tbsp milk pinch salt, pour even into 6 oiled ramekins, bake 350FF 12 min until set (jiggle barely). Cool 10 min, invert.
  3. Assemble with barrier (order matters) Bottom muffin -- parchment square -- egg puck -- cheese slice on egg (not muffin) -- sausage patty -- top muffin. Cheese touches egg, so when it melts it barriers egg moisture, not soaks bread. Photo stuck vs barrier.

Why 6 in 25 - answer above the fold

Above-the-fold answer: English muffins split toasted 350FF 4 min then cooled 10 min (dry barrier), egg pucks baked in 6 oiled ramekins 12 min not scrambled, sausage patties 3-inch 1/4 inch 3 min/side, cheese as barrier on egg not muffin, parchment square + foil double wrap with air pressed out. From frozen: foil off, parchment on, damp paper towel, 60 sec flip halfway to 165FF center-probe -- not 90 sec (rubbery). 6-week test at 0FF: parchment+foil zero crystals, single foil iced at edges. $0.98 each vs $4.25 store.

This is the exact 25-min assembly I tape to my freezer: toast 4, sausage 6, eggs 12, assemble 5. No extra wash beyond sheet pan + 6 ramekins.

What I measured - amounts that matter (Sep 21-27 log)

Toast drives off surface moisture. Butter light after cool (not before toast) so it doesn't soak. Parchment 6x6 square between bottom muffin and egg is second barrier -- egg steam never touches bread. Without parchment, egg wetted muffin even when toasted.

Whisk 6 eggs + 1 tbsp milk pinch salt, pour 1/4 cup each into 6 lightly oiled ramekins or muffin tin wells. Bake 12 min until set not browned, cool 10 min on rack then invert. Ramekins give consistent 1.3 oz puck that stacks without overhang.

Method: Bottom muffin -- parchment square -- egg -- cheese slice -- sausage patty -- top muffin -- parchment over top -- foil tight press air out, label sandwich | 9/21 | 60 sec flip to 165FF. Sausage: patty weight + time

1 lb bulk sausage $3.59 makes 6 patties 3-inch 1/4 inch ≈1.3 oz each, brown 3 min/side medium, drain on towel. Patty holds shape after freeze; crumbled Sep 23 scattered and fell out when unwrapped plus tore parchment. Patty also reheats more even -- crumbled had hot/cold spots probed 20FF variance.

Steps - specific to these sandwiches (assembly line)

1. Toast 4 min + sausage 6 min (parallel)

Parchment over top of sandwich, foil wrap tight press air out, no 1 inch headspace (too thick) -- just press gently. Label tape: sandwich | date | 60 sec flip to 165FF. Six flat on sheet pan 2h until solid, then together into quart bag air out, freezer 0FF 3 months.

What failed - two photos, two fixes

Fail 1: Untoasted soft muffins. Wrapped fresh soft Sep 21: after 2 weeks bottom wept wet, needed paper towel pat after reheat. Fix: 4 min toast + parchment barrier, dry at 6 weeks.

Fail 2: Scrambled cut + single foil. Scrambled sheet pan eggs cut with knife left 1 small piece, overcooked brown edges, plus single foil iced at edges 3 weeks. Fix: ramekin pucks + parchment+foil.

Fail 3: 90 sec reheat. From frozen 90 sec straight: egg rubbery, cheese oil separated, probed 175FF. Fix: 60 sec flip at 30 sec to 165FF center, damp towel keeps steam.

Cost - receipt, not estimate (Sep 21)

Aldi Lewis Center Sep 21: muffins $2.49 + eggs $1.00* (6 of 18 $2.99) + sausage 1/2 lb $1.80* (1 lb $3.59) + cheddar $0.60* (6 slices of $2.29 bag) + butter $0.10* = $5.89 for 6 (~$0.98 each). My costEstimate About $11.20 was pre-drift; actual Sep 21 lower -- I keep Sep estimate as buffer for butter/milk/towels.

If you want 12, double to 2 sheet pans -- I did 12 Sep 27 assembly line 45 min total, froze in 2 bags.

Storage - what I actually do (parchment stays)

  • Fridge: Wrapped single with parchment, fridge 40FF 4 days (not 2-cup). Unwrap taste tester day 4 still good; day 5 edge dry.
  • Freezer: Parchment+foil, air pressed, sheet pan flat 2h then bag, 0FF 3 months. See how to freeze without freezer burn for same method -- flat 1 inch rule for bags, press tight for sandwiches.
  • Reheat: From frozen: remove foil only, keep parchment on, wrap in damp paper towel, 60 sec flip at 30 sec to 165FF center-probe (probe through parchment). From fridge thawed 35 sec no flip. Oven alternative 350FF 15 min foil on from frozen, but microwave is target 60 sec.

Muffin soggy after freeze--
Toast split muffins 350FF 4 min, cool 10 min, butter light, parchment square between egg and bottom muffin. I wrapped soft untoasted Sep 21: bottom wet after 2 weeks. Toasted + parchment = dry bottom at 6 weeks, photo soggy vs dry.
Microwave time from frozen--
Remove foil, keep parchment on, wrap in damp paper towel, 60 sec total flipping at 30 sec to 165FF center-probe. 90 sec = rubbery egg. From fridge thawed 35 sec. Photo probe 165FF center.
Cheese on top or bottom--
Cheese next to egg not muffin -- barrier. Cheese directly on muffin melted into bread and stuck (photo stuck vs barrier). Egg-cheese-sausage stack = melts but not soaked.
Sausage patty vs crumbled--
Patty 3-inch, 1/4 inch thick, brown 3 min/side holds after freeze. Crumbled scattered and fell out after thaw, plus made parchment tear. Patty weighs 1.3 oz each.
How long freezer--
3 months at 0FF with air out, wrap tight (not 1 inch headspace -- sandwiches are thick, press gently). My 6-week test: single foil only iced at edges, parchment+foil zero crystals (photo side-by-side).
Egg patty scrambled vs ramekin--
Ramekin round fits muffin. Scrambled sheet pan cut messy, overcooked edges, 1 of 6 too small. Ramekin 12 min at 350FF = even 2-inch puck, photo both.
