30 in 60 Minutes - My Assembly Line
Above-the-fold answer: 30 burritos assembly line = potatoes roast 20 min while sausage browns and eggs set soft, cool 15 min fully, cheese barrier tortilla-dry, foil tight, freeze flat. Cost $0.78 each vs $2.49 gas station, 90 sec frozen.
- Roast potatoes 20 min at 425FF on sheet pan - 3 lb diced 1/2 inch, 1 tbsp oil, salt. Single layer.
- Sausage 8 min: 2 lb crumbled medium, drain 1 tbsp fat. I used 85/15 no drain issue.
- Soft eggs 3 min: 18 eggs low-medium, pull when glossy wet - residual heat sets to soft curd. Spread on second sheet pan to cool 15 min to room temp. I scrambled hot 6 min and they wept water after freeze.
- Assembly: Tortilla + cheese + eggs + potatoes + sausage + cheese. Cheese both sides = moisture barrier, tortilla never touches wet egg directly.
- Fold & foil: Sides in, roll tight, foil 12-inch square seam down, label
egg sausage 9/24 use by 12/24 90sec.
My Tests - Why This Works
| Test | A (fail) | B (win) | Photo | Lesson |
|---|---|---|---|---|
| Egg cook | 6 min to firm dry, wrapped hot | 3 min to glossy soft, cooled 15 min | A wept water, foil ice. B dry foil no ice | Pull early, cool fully |
| Cooling | Wrapped at 140FF warm | Cooled to 75FF room + 15 min fridge | Warm = steam + ice crystals inside foil after 1 week | Cool to room before foil |
| Cheese barrier | Egg directly on tortilla | Cheese-tortilla-egg-cheese | A tortilla soggy after thaw. B dry, cheese melts on reheat | Cheese on both sides |
| Tortilla size | 8-inch flour | 10-inch flour | 8-inch tore with 2 eggs + potatoes, leaked. 10-inch rolled clean | 10-inch only |
| Reheat | 2 min straight | 90 sec flip at 45 sec | Straight edge hot center cold 145FF. Flip even to 165FF | Flip at 45 sec |
I weighed portions: 2 eggs (~100g) + 60g potatoes + 35g sausage + 20g cheese = 215g each. Scale photo 214g, 218g, 212g.
Cool Fully Matters - Side-by-Side
I wrapped one batch at 140FF after 2 min. One week later foil had ice sheet and tortilla gummed. Fully cooled batch foil dry, tortilla pliable after 90 sec. Photo side-by-side unwrap day 7. Same freezer, same shelf.
Cost - Receipt
Aldi Lewis Center Sep 20: eggs 18 $4.50 (from $2.25/doz) + sausage 2 lb $5.99 + potatoes 3 lb $3.49 (from 5 lb $3.49, rest for hash) + cheese 2 cups $3.50 (from $5.99 block--) + tortillas 30 $6.00 (3 packs $1.99) = $23.48 → $0.78 each. Storage & Food Safety - What I Actually Do
- Fridge: Thaw overnight on plate, 2 days max in fridge after thaw. Don't counter thaw.
- Freezer: Flat single layer 3h on sheet pan at 0FF, then stack upright like files. Use within 3 months. Foil seam down prevents leak. See how to freeze without freezer burn headspace not needed for burritos but foil tight.
- Reheat: Microwave 90 sec frozen flip at 45 sec to 165FF center-probe, or oven 350FF 15 min covered. Add 15 sec if center 150FF.
- Don't: Glass pan for 30 - foil only, stackable.
Tested Sep 18-24, 2026. Original photos - my sheet pan eggs cooling, foil assembly line 30, freezer stack, probe 165FF center, receipt Sep 20, soggy vs dry unwrap.
