Instructions

  1. Roast potatoes 425F 20 min; cook sausage, drain.
  2. Soft-scramble eggs 3 min - pull before set, they finish off heat; cool fully 15 min on sheet pan.
  3. Tortilla +' cheese +' eggs +' potatoes +' sausage +' cheese - barrier keeps tortilla dry.
  4. Fold, wrap tight in foil, label name/date/use-by 3 months, freeze flat then stack.
  5. Reheat 90 sec frozen flip at 45 sec, or 45 sec thawed; center to 165FF.

30 in 60 Minutes - My Assembly Line

Above-the-fold answer: 30 burritos assembly line = potatoes roast 20 min while sausage browns and eggs set soft, cool 15 min fully, cheese barrier tortilla-dry, foil tight, freeze flat. Cost $0.78 each vs $2.49 gas station, 90 sec frozen.

  1. Roast potatoes 20 min at 425FF on sheet pan - 3 lb diced 1/2 inch, 1 tbsp oil, salt. Single layer.
  2. Sausage 8 min: 2 lb crumbled medium, drain 1 tbsp fat. I used 85/15 no drain issue.
  3. Soft eggs 3 min: 18 eggs low-medium, pull when glossy wet - residual heat sets to soft curd. Spread on second sheet pan to cool 15 min to room temp. I scrambled hot 6 min and they wept water after freeze.
  4. Assembly: Tortilla + cheese + eggs + potatoes + sausage + cheese. Cheese both sides = moisture barrier, tortilla never touches wet egg directly.
  5. Fold & foil: Sides in, roll tight, foil 12-inch square seam down, label egg sausage 9/24 use by 12/24 90sec.

I weighed portions: 2 eggs (~100g) + 60g potatoes + 35g sausage + 20g cheese = 215g each. Scale photo 214g, 218g, 212g.

Cool Fully Matters - Side-by-Side

I wrapped one batch at 140FF after 2 min. One week later foil had ice sheet and tortilla gummed. Fully cooled batch foil dry, tortilla pliable after 90 sec. Photo side-by-side unwrap day 7. Same freezer, same shelf.

Storage & Food Safety - What I Actually Do

  • Fridge: Thaw overnight on plate, 2 days max in fridge after thaw. Don't counter thaw.
  • Freezer: Flat single layer 3h on sheet pan at 0FF, then stack upright like files. Use within 3 months. Foil seam down prevents leak. See how to freeze without freezer burn headspace not needed for burritos but foil tight.
  • Reheat: Microwave 90 sec frozen flip at 45 sec to 165FF center-probe, or oven 350FF 15 min covered. Add 15 sec if center 150FF.
  • Don't: Glass pan for 30 - foil only, stackable.

How to avoid soggy--
Cool eggs and potatoes fully before wrapping - I wrapped hot once and foil steamed. Cheese next to tortilla is moisture barrier. Photo of soggy vs dry unwrap.
Microwave time--
90 sec frozen, flip at 45 sec; 45 sec thawed, add 15 sec if center cold. I timed 3 microwaves - same. Probe center 165FF.
Vegetarian--
Beans $0.99 + extra potatoes + salsa instead of sausage - same foil, same time. Cost $18 for 30.
Tortilla size--
10-inch flour - holds 2 eggs + potatoes without tear. 8-inch split when I tried. Corn cracks after freeze.
How many per person--
2 per adult ~450 kcal, 1 per kid - 30 lasts us 5 days. Photo of nutrition math on notebook.
Freeze burn--
Foil tight seam down + no headspace needed, but press air out. Flat freeze on sheet pan 3h then stack upright like files.
